This egg jar has become our favorite weekday lunch. Warm brown rice with tamari, cooked salmon, a layer of micro greens, sauerkraut, sprinkled sesame seeds, poached egg and drizzled with a little extra tamari on top. We prepare brown rice in advance and keep a jar in the fridge. We make left over salmon from a family dinner or prepare salmon in advance. My 3 year old is normally not excited about sauerkraut or micro greens, but they both get lost in this little jar of goodness. When the egg yolk breaks it adds a delicious new depth to the jar, and this is coming from someone who doesn’t usually like to eat eggs in any form. I finally learned how to poach an egg from googling a great Jamie Oliver video, it’s really easy.
